I had this drink at a nice restaurant in Chicago several years ago and came home and re-created it.
Sharing My Favorite Cocktails
I always loved mixology as much as cooking. It's pretty much the same thrill. Mixing and matching to find your very own combination. If you liked my Blue Margarita Recipe then you will probably like this one too. However, there is no coconut in this drink. Plus, it's non-dairy.
Most of the recipes online call for something coconut flavored or crunchies on the rim. Not this recipe! These boots are made for drinkin'.

- Fresh Pineapple, Juiced with a Juice Extractor or Can of Dole 100% Pineapple Juice. Learn How To Juice a Pineapple.
- Fresh lime, squeezed
- Lime Flavored Vodka
- Midori Melon Liquor
- Vanilla Rum, Clear
Midori, The Melon Liquor
This not not a vintage cocktail itself, but every ingredient has a history. The ingredient that makes my Key Lime Pie Martini shine- is the Midori.
Midori is made with special Japanese melons and other fruits. A few years back, they re-worked the ingredients so it would have less artificial ingredients.
The funny fact about Midori is the connection to John Travolta. According to Liquor.com, "It turns out John Travolta was one of the first people to sample the Japanese melon liqueur, as it was launched in 1978 at famed New York City discotheque Studio 54 during a cast party for “Saturday Night Fever.” The neon-green-hued liqueur in the frosted bottle was sipped with tonic on the iconic dance floor that night."

Directions:
1. Juice your ripe pineapple. This pineapple gave me exactly two cups of juice. It was a juicy one. Or use 100% Dole can pineapple juice.
2. Pour all ingredients into an ice filled shaker. Shake and Strain.
3. Garnish with a lime wedge.
Substitutions
Pineapple Juice- You can use Dole 100% Pineapple Juice from the can. I like to buy the mini-cans. Very handy for many recipes and you can barely tell the difference between fresh and canned.
Vanilla Rum, and Lime Vodka- You can substitute out any brands you like. Just make sure you get the clear rum or else your cocktail color will be off.
Sometimes I do put ice cubes in it!

- Refreshing and sweet, but not too sweet.
- You can add a red cherry and consider it a Holiday Cocktail.
- This post does not come with a recommendation for the juice extractor I have featured here. I purchased this one at a thrift store a few years ago. It's been holding up great and does a nice job for the price I paid. All of my juicers have come from thrift stores for less than $10.

Key Lime Pie Martini
Equipment
- 1 shaker
Ingredients
- 4 ounces pineapple juice
- 1 ounce vanilla rum, clear
- ¾ ounce Midori melon liquor
- ½ ounce lime vodka
- ¼ ounce lime juice, fresh squeezed
Garnishes
- 1 lime wedge
- 1 cocktail cherry
Instructions
- Measure and pour all ingredients into a cocktail shaker filled with ice.
- Shake vigorously with the ice, 27 times.
- Strain into chilled martini glass and garnish as desired.
