Sweet Potato Smoothie Recipe

Raw Sweet Potato with Unpasturized Orange Juice and Vanilla Frozen Yogurt. This sweet treat taste like an Orange Cream Smoothie. Optional to add whipped cream, sprinkles, and a cherry for the kids.

Equipment

  • 1 high powered blender

Ingredients

  • 1 ¾ cup fresh uncooked cubed sweet potato about one regular sized sweet potato, not yam
  • 1 ¼ cups pasteurized orange juice, not from concentrate
  • 1 ¾ cups Vanilla Frozen Yogurt or Vanilla Ice Cream

Optional

  • whipped cream
  • rainbow sprinkles
  • maraschino cherries, patted dry

Instructions

  • Wash, peel, and then chop sweet potato into small cubes.
  • In a high powered blender, on the "Juice" setting, blend sweet potato with orange juice until liquified..
  • Add Frozen Yogurt and blend on low until smooth.
  • Pour into serving cups and top with optional topping if desired.
  • Makes four ¾ cup kid sized servings or two regular servings.

Notes

*note: If using extracted juice, increase to 2 sweet potatoes.
