Jiffy Cornbread With Creamed Corn

Ingredients

  • 3 eggs
  • ½ cup vegetable or canola oil
  • 1 cup sour cream (8 ounce Container)
  • 1 (14.75 oz.) can Sweet Corn Cream Style
  • 1 (8.5 oz.) box Jiffy Corn Muffin Mix

Instructions

  • Preheat oven to 400 degrees.
  • In a large bowl, whisk the eggs.
  • Slowly whisk in the oil.
  • With a spoon, stir in the sour cream, creamed corn, and muffin mix until smooth.
  • Pour into a 12x9 or 10x10 baking dish and bake for 25-30 minutes.
  • If you use a smaller baking dish, you may need to bake it longer until it is cooked through.
  • Let rest for 20 minutes before serving. Serves 6
