Ingredients

cups
cooked white meat, shredded and chopped
the breast meat from a warm rotisserie chicken, skin removed

cup
mayonnaise
more or less to taste

stalks celery, chopped
equals about 1 cup

jarred banana pepper rings

grape tomatoes, sliced

Instructions
In a large bowl, stir together the shredded and chopped white meat along with mayonnaise and celery. Stir well. Chill for at least 1 hour.
Assemble
Mound 2 Tablespoons of cold chicken salad onto each slider. Garnish sandwiches with topping choices such as pepper rings or tomatoes.
Notes
The salad is best made while the chicken is warm, and then chilled for at least an hour.
