Apple Carrot Salad Waldorf

A brighter healthier version of the classic Waldorf Salad. Honeycrisp Apples, Carrots, Golden Raisins, Yogurt, less the Mayo, Walnuts.

Ingredients

  • 3 Honeycrisp Apples washed, cored and diced- skin on
  • 1 ¼ cup vanilla yogurt
  • 3 tablespoons mayonnaise
  • teaspoon salt
  • ½ cup golden raisins
  • 1 cup pre-shredded carrots see note*
  • ¾ cup chopped celery
  • ½ cup walnuts chopped (not black walnuts)

Instructions

  • Wash, core, chop the apples into ¼ -inch cubes. Set aside.
  • In a medium bowl, stir together the yogurt, mayo and salt.
  • Add yogurt mixture to apples, raisins, carrots, celery and walnuts. Stir.
  • Chill for at least one hour before serving.

Notes

There are many varieties of apples that make for a great Waldorf Salad. Just make sure they are sweet and firm. 
*Pre-shredded carrots are preferred for this recipe because they are crisp and won't discolor the salad.
