I’ve always been frightened of HASH. My concept was of a greasy block from a can, something similar to dog food. I was having brunch with my friend Laurie Figone who has her own cooking show out in California “Cooking with Laurie” http://www.cookingwithlauriefigone.com/and she introduced me to real hash. A simple recipe from one of my vintage cook books caught my attention. I twisted it up a little bit. This deserves a Hash Tag, don’t you think? (insert chuckle here)
Recipe inspired by: Bethel College Women’s Association; First Edition edition (1974) You can purchase this book on Amazon for about $50. It’s one of my favorite finds because I only paid a few dollars for this copy!
To start off with, I happened upon a happy little roast beef for an astonishing price of $5.00. Then baked it in the oven the night before, with seasoned salt and pepper. You could use an inexpensive steak or a left over pot roast.
Next, chopped and boiled some beautiful gold potatoes until tender. Added some melted butter and warm milk a little at a time, gently pressing until creamy but still lumpy.

Cubed up my cold cooked roast beef and chopped it with a Sweet Vidalia Onion. Did you see the fun gift basket you can win from Flavors of Summer?
Mix the meat/onion with the potatoes and we’re almost done. Season to taste with seasoned salt.
You don’t even need to clean your food processor. Just throw in a few slices of bread and pulse until crumbly. Stir your crumbs with some melted butter.
Stir together the Meat & Potatoes, sprinkle on the bread crumbs. Bake at 375 for 25-30 minutes.
Fry up an egg. Let’s eat.
It’s like the toast, the hash browns, the steak and the egg, all in one dish.
